In spring, we need something to kick us into the new season, get the sun shining and the cocktail in your hand – and that’s what TV’s Andy Clarke delivers with his Springtime Spritz cocktail.

2 Lemon Sherbet Sweets

*Garnish* 6 Raspberries

*Garnish* 2 Sprigs Lemonbalm
Method
Crush a handful of Lemon Sherbet sweets using a pestle and mortar, then sprinke the crumbs onto a small plate.
Pour a generous splash of V Overproof White Rum onto another small pate. Dip the rim of your glass in the rum, then roll carefully around the crushed sweets to create a sticky decorative rim.
Place your ice and raspberries into your glasses in an alternating pattern.
Pour your V Overproof Rum, Triple Sec, Lime Juice and Grapefruit Soda into a jug with some ice, stirring gently to incorporate.
Carefully pour into your glasses, allowing some room at the top for your Blood Orange Juice top.
Express a small sprig of Lemon balm, place atop your drink, and enjoy!
